Ghiya/Lauki/BottleGourd ki Sabzi

The first vegetable that I am bringing out to all of you from our favourite Indian Kitchen is Ghiya/Lauki/BottleGourd ki Sabzi/vegetable. The green vegetable is one of the most healthy vegetables rich in Vitamin C and B Complex. It is also rich in protein and I know, this is one vegetable you would like everyone in the house to have. My personal favourite, let's learn how to cook this vegetable quickly.
Here are few ingredients (Easily Available in Indian Kitchens)

- 1 medium size Ghiya /Lauki/bottle gourd/Doodhi chopped in cubes
- 1 chopped Onion
- 1 tsp. of Cumin seeds
- 1 tsp. ginger minced
- 2 small diced tomatoes
- 1 tsp. of Red Chili powder
- 1 tsp. of Turmeric powder
- 1 tsp. of black pepper
- 1/2 tsp of sugar
- Salt to taste
- ½ cup of chopped Cilantro/dhaniya leaves
- Desi Ghee
Let's cook :)
1. Take pressure cook and add 3 tsp of desi ghee
2. Now add cumin seeds and once it starts to splutter, add onion and ginger
3. When onion turns golden brown, add tomatoes
4. Add salt, turmeric, red chilly powder, black pepper and sugar
5. Cook the mixture for 4-5 minutes, until tomotoes are softened and spices are cooked
6. Now add chopped lauki to the mixture and mix it well with the mixture
7. Now stir the mixture adding 1 cup of water and close the lid of pressure cooker.
8. Cook it for 10-15 minutes.
9.Take out the sabzi in a bowl and garnish it with coriander leaves.
10. Serve it hot with Roti or parantha
