Masala Pav Bhaji

Hello Readers,

Today's recipe is Pav Bhaji. It is a curry we prepare in India with vegetables and serve with a special bread called Pav or ladi Pav. My friend Neerja from Doha shared this recipe with me and I cooked it today for brunch. We had few friends coming over so I cooked in huge quantity and thought we will have it for dinner as well. But imagine what, friends ate it all and what can give you more happiness when your food is appreciated by all.

So here comes the recipe 

 


We will need 

Two medium sized potatoes 
One cup chopped cauliflower
One cup peas
Three chopped carrots 
One medium sized chopped green capsicum 
3 medium sized tomatoes - chopped 

Put all the above chopped vegetables , add water , salt and turmeric powder. Boil all the vegetables together. You can also pressure cook the vegetables. Aim is to boil all the vegetables to the extent that we can easily mash these veggies later. 

Once the vegetables are boiled, drain out excess water and mash all the vegetables. 

Now you would need 

Butter - 2tbsp 
One medium sized chopped onion 
Ginger 1/2 tsp 
Red chilli powder (Degi Mirch for colouring) 1/2 tbsp 
Turmeric powder 1 1/2 tsp 
Pav Bhaji masala 3 1/2 tsp and adjust according to taste 
Two tsp of tomoto purée (packaged one) for extra red colour 

Salt according to taste 

Heat butter in the PAN and add onion and ginger 
Sauté until turn pink in colour 
Add red chilli powder and turmeric powder in the butter for a better colour of Pav Bhaji 
Now add the mashed vegetables
Stir all the ingredients together 
Add Pav Bhaji Masala , tomoto purée and salt.
You can also add little water of you think the curry / Bhaji is too dry.
Cook it for five minute and turn the flame off.
Serve the delicious Pav Bhaji with hot pavs.
