Stuffed Bhindi (ladies finger) Fry

 



Hello dear readers,

I am sharing with you all; one more; very easy and tasty recipe from Indian Kitchens. Stuffed Bhindi is easy to cook and tastes very good. In north India, Bhindi is one of the all time favourite summer vegetables. Stuffed Bhindi is one way to cook Bhindi amongst many other ways to cook it. Let's learn how to cook stuffed one.

Here comes the recipe :

  • Bhindi/Ladyfinger-250 gm
  • Gramflour/besan-3 tbsp
  • Cumin seeds-1/2 tsp
  • Dry mango powder/aamchur powder-1/2 tsp
  • Turmeric powder-1/3 tsp
  • Red chilli powder-1/3 tsp
  • Garam masala powder-1/2 tsp
  • green chilli or paste-1 tbsp
  • Mango Pickle-1 tsp
  • Oil from mango pickle-1/2 tsp
  • Mustard oil-3 tbsp
  • Salt to taste
Method:
  • Wash and dry the bhindi, slit it for stuffing.
  • In a bowl: Mix all the ingredients except bhindi and mustard oil
  • Gently stuff the bhindi with prepared masala one at a time and keep it aside.
  • Heat a pan, add mustard oil and let it heat till the mustard oil fragrance disappears.
  • Add the stuffed bhindi one by one in the pan.
  • Cover the half of the pan and cook it on low flame for 6-8 minutes.
  • Keep stirring or tossing in between.
  • Cover the pan and cook it for a minute on low-medium flame.
  • Once bhindi turns soft, fry it for 30 seconds on high flame to make it crispy, keep tossing/stirring.
  • Turn off the flame.
  • Serve hot with Chappati or paronthi (Punjabi Breads)
